The Black rice is also known as Purple rice. They are classified and kept under the Plant Kingdom with Species name Oryza sativa L. The varieties of black rice are Indonesian black rice and Thai jasmine black rice. Black rice has the rich source of iron, vitamin E and antioxidants. There are three stages to make edible black rice, they are rinsing the black rice, boiling the black rice and cooking the black rice. In olden days, the emperor’s will reserve this rice to eat as they believe this rice could prolong their life.
There is myth that Lord Vishnu elicited Earth to give birth to rice and God Indira taught people how to cultivate it. In China, rice is considered as the gift of Animals. Once there was a dangerous disaster and because of that there are no foods for the people to eat. After some months there came a dog with seeds of rice hanging on its tail. Rice can be used to make various items such as snacks, desserts, main courses, alcoholic beverages and as a special food for religious purposes. In India rice is used in the education initiation ceremony. During the ceremony, the child is assisted to write the first letter of their language in a plate filled with rice and the word is again written on the child’s tongue with gold. Rice is used in this ceremony as it represents fortune and blessings for the halcyon development of the child.
Black rice offers all the nutrition and health that brown rice offers and also provides some serious antioxidants. Because of its dark color it have anthocyanin antioxidants that are found in blue and black berries which are dark in color. It is also called as purple rice as it changes its color on cooking from black to deep purple or claret color. Black rice lowers bad cholesterol, increase good cholesterol, expands serum glucose, reduces triglycerides, and treats symptoms of alzheimer’s and Parkinson’s. It has anti-fungal, anti-bacterial, anti-viral, anti-carcinogenic, anti-inflammatory properties. It controls blood sugar, lowers LDL cholesterol levels, improves immune system, prevents osteoporosis, has compounds like niacin, thiamin, folate, riboflavin and pantothenic acid regulates metabolism and improves nervous system activity.
